چکیده

The presence of 3-monochloropropanediol (3-MCPD) in edible oils has been widely reported with its potential health risks. aim this study was to apply optimized recent updated and validated enhanced swift analytical indirect method for determining 3-MCPD consumed (palm, palm olein, extra virgin olive, corn, sunflower, soybean, olive pomace) blend 5% sunflower oil oil, using selective sensitive gas chromatography tandem triple quadrupole mass spectrometry (GC-MS/MS) employing deuterated (3-MCPD-d5) as internal standard (IS) during the entire procedure obtain precise accurate results. occurrence variation contents among studied were found different levels ranged from 93.1 µg/kg 5634.1 samples, maximum value assigned (5634.1 µg/kg) followed by olein (5576.8 µg/kg), corn (2447 (1817.3 soybean (1486.1 pomace (572.5 (210 (93.1 µg/kg). Palm, out limits recommended Commission Regulation (EU) 2020/1322, whereas, compliance within EU. Moreover, content could be used a good tool authenticity quality genuine oil.

Collaborative Study of an Indirect Enzymatic Method for the Simultaneous Analysis of 3-MCPD, 2-MCPD, and Glycidyl Esters in Edible Oils.

A collaborative study was conducted to evaluate an indirect enzymatic method for the analysis of fatty acid esters of 3-monochloro-1,2-propanediol (3-MCPD), 2-monochloro-1,3-propanediol (2-MCPD), and glycidol (Gly) in edible oils and fats. The method is characterized by the use of Candida rugosa lipase, which hydrolyzes the esters at room temperature in 30 min. Hydrolysis and bromination steps ...

Determination of Metal Contents in Edible Vegetable Oils Produced in Iran Using Microwave-assisted Acid Digestion

The concentration of heavy metals in vegetable oils is an important criterion for the assessment of oil qualities with regard to freshness, keeping properties, storage and their influence on human nutrition and health. Trace heavy metals in vegetable oils are known to have an effect on the rate of oil oxidation. In this work, the contents of lead (Pb), cadmium (Cd), nickel (Ni), manganese (Mn),...

Optimization of an Indirect Enzymatic Method for the Simultaneous Analysis of 3-MCPD, 2-MCPD, and Glycidyl Esters in Edible Oils.

We developed a novel, indirect enzymatic method for the analysis of fatty acid esters of 3-monochloro-1,2-propanediol (3-MCPD), 2-monochloro-1,3-propanediol (2-MCPD), and glycidol (Gly) in edible oils and fats. Using this method, the ester analytes were rapidly cleavaged by Candida rugosa lipase at room temperature for 0.5 h. As a result of the simultaneous hydrolysis and bromination steps, 3-M...

Analysis of 3-MCPD and 1,3-DCP in Various Foodstuffs Using GC-MS

3-Monochloro-1,2-propanediol (3-MCPD) and 1,3-dichloro-2-propanol (1,3-DCP) are not only produced in the manufacturing process of foodstuffs such as hydrolyzed vegetable proteins and soy sauce but are also formed by heat processing in the presence of fat and low water activity. 3-MCPD exists both in free and ester forms, and the ester form has been also detected in various foods. Free 3-MCPD an...

Determination of Acylglycerols in Diesel Oils by GC

In many EU countries and outside the EU, besides the addition of pure methyl ester B-100 to diesel oil, mixtures of methyl esters are also added to fuel. To be used as fuel, methyl esters must meet certain requirements, one of which is a certain level of acylglycerols. The paper presents results of determination of acylglycerols in diesel oil dotted with fatty acid methyl esters. The compounds ...
